The engineering decision
The difference from a normal store is that the delivery window is not a convenience — it is the product. An order arriving an hour late has failed completely, no matter how smooth the checkout was.
So the entire system is organised around scheduling and dispatch rather than around a cart. That inversion changes the data model, the admin interface and what you choose to show the customer.
